Sweet Saturday morning

The rice pudding is a  typical Tuscan dessert,
delicate taste that together with Ricciarelli, the horses and the
is lost in the popular memory of the medieval city by giving away most famous in Italy: the Palio of Siena. It is a simple and delicious small cake. Today as yesterday, this dish can be served as cheerful for children snack seen its content not very high in calories, or as a dessert to be enjoyed together with a good dessert wine. The preparation is not complex, but it still requires some care especially in the delicate phase of cooking rice.

These biscuits in Tuscany are called atypically “rice pudding”. The name is atypical as with the word pudding is meant generally a preparation gelatinous, soft and still a sweet soft consistency.

These biscuits are baked in the oven with a base of pastry and a filling of rice, cooked in milk.

The shape of the characteristic shape of rice puddings is to cylinders with the basic ellipsoidal rather than circular.

 I’ve always considered the rice puddings represent the first test to which I submit a new bakery in Tuscany.
